Resveratrol ( Res for short) has a chemical name of 3, 4', 5-trihydroxy-1-l. 2 Stilbene (also known as stilbene triphenol), which is a non-flavonoid polyphenol compound containing stilbene structure, molecular formula C, foot 120. The relative molecular weight is 228.25. White needle-like crystals. Melting point: 256℃-257℃. Sublimation: 261℃. It is hardly soluble in water, and easily soluble in organic solvents such as ether, chloroform, methanol, ethanol, ethyl acetate, acetone, etc. It produces fluorescence under 366nm ultraviolet light.

Res is very unstable. It is often combined with glucose to form glycosides. Res and its glycosides are divided into cis and trans forms, and mainly exist in trans forms in nature. The physiological activity of the trans isomer is stronger than that of the cis isomer, and the monomer is stronger than the glycoside. Under ultraviolet light. Trans-res can be transformed into cis-structure. Under completely dark conditions, trans-Res can exist stably in ethanol for several months. The stability is only slightly reduced under high pH (≥10) environment. The cis-Res is stable under dark conditions and only in a neutral environment.



Res often exists in the form of a sugar shake. A small amount is widely present in free form in natural plants or fruits such as grapes, knotweed, peanuts, mulberry, maize, Korean locust, veratrum and cassia seed. So far at least 72 plants of 21 families and 31 genera have been found in res. It is a kind of phytoantitoxin produced by many plants under fungal infection, ultraviolet irradiation or pathological conditions, which can improve the ability of plants to resist pathogens.
