1. Freeze-drying method
The freeze-drying method freezes the water in the material into solid ice. Under vacuum conditions, the water directly sublimates into water vapor and escapes, thereby removing the water from the material. It is characterized by well-preserved nutrients and volatile components, but the processing cost is high. Therefore, freeze-drying is rarely used to produce solid beverages. Only a few products with higher added value such as instant tea powder and coffee powder are produced in this way.
2. Spray drying
Spray drying is a process that uses an atomizer to disperse the material liquid into fine droplets, and rapidly evaporates the solvent in the hot drying medium to form dry powder. The form of the material liquid can be a solution, suspension, emulsion, etc. that can be transported by a pump. In liquid form, the dry product can be in the form of powder, granules or agglomerated granules.
The production range of spray-dried solid beverages is very wide. In addition to the widely used milk powder, instant soybean powder and tomato powder, lychee powder, lotus root powder, banana powder, strawberry powder, etc. have also been reported.
The powder processed by spray drying has little nutritional loss and good color. In addition to being directly prepared, it can also be used as an ingredient. However, spray-dried powder generally has smaller particle size and poor reconstitution ability, and needs to be granulated before it can be directly reconstituted. Instant milk powder is the most typical solid beverage that is quickly dissolved in hot and cold water through spray drying and agglomeration.
